Rooted in the rich heritage of the area, Prospect honors Hotel Jerome’s long-standing history in Colorado, telling the story of the Rocky Mountains through an epicurean lens that showcases the bounty of its rivers, ranches, orchards and the terrain that surround them. Offering an unparalleled sense of place, Prospect highlights local areas and producers, including the Roaring Fork Valley, Independence Pass, Hotchkis, Elk Mountain, Grand Valley’s wine country and the rich farmlands of Palisade and Paonia.
  • The Colorado Journey:
    The Colorado Journey is a re-imagined tasting menu experience that invites guests to immerse themselves in the destination from a totally unique perspective. Telling stories is central to Hotel Jerome’s history, which inspired the idea to build Prospect on the foundation of an epicurean journey through the rich heritage and abundant lands that surround us. The Colorado Journey invites guests to feel completely at home as our team shares tales of the destination through a progression of dishes that are intended to highlight local artisans and ingredients. The optional beverage pairing menu shines a light on the best of Colorado wine, beer and spirits, encouraging a deeper sense of connection.

  • The Taste of the Land:
    The Taste of the Land is a three course epicurean adventure through the Colorado landscape that lets the guest craft their own experience with a choice of first course, main and dessert. Additional gifts from the kitchen are designed to complement the menu and add an element of discovery.

Wheeler, Bad Harriet celebrates powerful women throughout history through innovative craft cocktails, avant-garde techniques, and refined presentations. The guest experience, designed to envelop the senses, offers patrons the choice of an à la carte cocktail experience or the multi-course “The Soiree,” a prix fixe bookable endeavor featuring a set menu inclusive of cocktails and bites. Seats at the bar will also be available on a first-come, first-served basis for walk-ins to enjoy the Bad Harriet experience. Enhance your evening with the Taikun Sushi Omakase experience, available daily from July 13 to October 13, for a perfect pairing of culinary artistry.
