This September, Felix Roasting Co. unveils its newest location in Aspen, Colorado as a residency at the celebrated Hotel Jerome, Auberge Resorts Collection, marking the brand’s first debut outside of New York City, which joins their NoMad flagship and SoHo outpost in downtown Manhattan. Founded by Matt Moinian and renowned interior designer Ken Fulk, Felix is the contemporary specialty coffee concept and roasting company built from an eclectic team of visionaries, bringing a luxurious and thoughtful approach set out to redefine coffee culture.

Felix’s innovative beverage program stands apart, incorporating the finest coffees and teas, methodically prepared to deliver an unparalleled, sensory experience. The Aspen outpost brings the best of Felix to the Rockies, while collaborating with the Hotel Jerome Epicurean team to reimagine Felix favorites and introduce exclusive items to the Aspen menu, previewing local and seasonal produce, ingredients and flavors synonymous with the beloved Colorado destination. Guests can enjoy Felix’s signature hot and cold beverages, including filtered coffee and espressos, draft nitro iced tea, seasonal draft lattes, the Felix espresso tonic and more, along with savory and sweet bites with influences from the Hotel Jerome kitchen.

A collection of specialty drinks pull together the experience, each meticulously developed from scratch and explicitly served with Felix’s house-made non-dairy milks, proprietary syrups and tonics, and custom spice blends. In honor of the roastery’s bi-coastal debut, Felix welcomes back their famous Hickory Smoked S’mores Latte and reintroduces the Lavender Honeycomb Latte, a dynamic concoction made with a raw cacao and espresso-infused steamed sweet cream and topped with a burnt honey and caramel honeycomb toffee web, then garnished with fresh rosemary and lavender blossoms handpicked from Hotel Jerome’s onsite garden – now exclusively available at Felix Aspen, and offered at Felix’s two NYC locations for the month of September to commemorate the opening.

Felix reinvents their signature espresso with the launch of Felix Espresso Pods – an easygoing blend of hand-picked Ethiopian, Guatemalan and Colombian coffees, packaged in single-serving Nespresso-compatible pods for Hotel Jerome guests to enjoy in-room and at home; available for purchase in the Aspen store and online with nationwide shipping ($15/ea).

For its third location, Felix brings its trademark all-out romance, maximalist aesthetic to Auberge Resorts’ historic Mountain-spirited property with a restored vision to fit its new Western address. Helmed by creative director Ken Fulk and his team of visionaries, the 710-square-foot space retains its original architectural integrity with layered natural textures atop custom décor, plush velvet seating and floral wallpaper-coated walls, synonymous with the brand’s New York locations. Blush-painted wainscot decorative built-ins line the perimeter of the café with chevron-patterned white oak floors extending from a central brass medallion, while a mix of historic prints and pastel-hued contemporary abstract portraits by artist Jose Trujillo decorate the walls. Overhead, a gold-stamped tin outlines the space, adorned with vintage pink Murano glass chandeliers creating a softly flattering light throughout.

Felix Roasting Co. opens its doors on Thursday, September 9th with regular service from 7am to 2pm, Monday through Sunday, at Hotel Jerome, Auberge Resorts Collection in the heart of Aspen, Colorado.
