Culinary and Cocktail Pop-Ups Invite Celebratory Moments
At Mauna Lani, Auberge Resorts Collection, whether learning to surf with Kainalu Ocean Sports at the Surf Shack or dining at the island’s most coveted oceanfront restaurant, CanoeHouse, guests are welcomed like family to the storied Hawaiian retreat on the Kohala Coast. This holiday season, the resort will also warmly welcome Malibu’s surfy seafood destination, Broad Street Oyster Company, December 18–January 3. During its residency on the Big Island, Broad Street Oyster Co. will offer guests a taste of its famous fresh seafood—including its award-winning lobster roll—in the form of exclusive private dinners for families and small groups. In collaboration with the exceptional culinary team at AltaGracia, Selva—the famed gourmet cocktail bar in Oaxaca and one of the top 50 best bars in North America—will develop a menu featuring seasonal, indigenous ingredients perfectly poised for the festive season. During its week-long residency, from December 12-16, Selva will also host several events to showcase their bar talents with a Costa Rican twist—from mixology and tasting classes to a sunset cocktail hour pop-up and exclusive drink menu paired with a coursed dinner.
Deer Valley icon Goldener Hirsch, Auberge Resorts Collection will channel the 1800s-Parisian-absinthe-den vibe of Apotheke, the urban speakeasy with famed outposts in New York and Los Angeles, to reimagine the Antler Lounge as a European-inspired apothecary. Leading up to the holidays, the beloved mountainside destination will partner with Apotheke for the month of December to craft inspired beverages and offer exciting cocktail classes in a setting that loosely mimics the Apotheke Academy. Guests will have the opportunity to explore the cocktail formulas and learn the tricks and trade for crafting some of the best and balanced beverages.
Chef T.J. Steele’s Michelin-starred Oaxacan hot spot Claro makes its way from New York to New Mexico for a special Thanksgiving weekend collaboration at Bishop’s Lodge, Auberge Resorts Collection alongside Chef Pablo Peñalosa. Located in Santa Fe, the resort was recently recognized as one of the most architecturally stunning properties in the world by Architectural Digest and as the number one resort in the West by Travel + Leisure. On November 26, dinner guests will journey through the rich history behind the culinary traditions, artisanal culture, cooking and heritage of Oaxaca. Guests will experience diverse textures and flavors of homemade dishes featuring locally sourced ingredients that speak to indigenous techniques with a modern approach, each course accompanied by a menu of mezcal, “the spirit of Oaxaca.”
In Aspen, Colorado, Hotel Jerome, Auberge Resorts Collection will welcome back Uchi, award-winning Chef Tyson Cole’s signature non-traditional take on Japanese food, for an epicurean takeover of Prospect restaurant and the hotel’s cocktail bar Bad Harriet, December 14–17. The menus will feature signature dishes by chefs Lucas Candler and Jack Yoss, and curated sake pairings by Stuart Morris, one of the only American Sake Masters.
Primland Resort, Auberge Resorts Collection is set to host the Garden & Gun Club at its private estate in the Blue Ridge Mountains, transforming the Tobacco Barn into a Garden & Gun Club Holiday Bar Experience. The intimate den invites guests to celebrate the season with a curated cocktail menu by the Atlanta-based restaurant. The experience will be unveiled with a special invite-only cocktail party on December 1. Guests retreating to the mountains for the holidays can also partake in the resort’s Christmas Tree Concierge service to have their rooms or cottages decorated for their stay. Designers and Chefs Collaborate to Present Decked-out Dining Experiences
Kicking off the season of hosting and toasting, New York- and Savannah-based event and interiors design collective, founded by Rebecca Gardner, Houses & Parties will set the table at Mayflower Inn & Spa, Auberge Resorts Collection, in Connecticut, for a dreamy private holiday dining experience. Launching November 3, “Room of Joyful Pursuits” is a fanciful and convivial private dinner located in the property’s intimate Library, curated by party planner extraordinaire Rebecca Gardner, accompanied by a seasonal menu from Mayflower’s Inspiring Chef Cortney Burns. Guests will delight in the festive ambiance fueled by Gardner’s whimsical tablescape and Chef’s Bounty Autumnal Feast, featuring decadent yet soul-warming dishes—from garden caviar and curried pumpkin soup to short rib steak, shortbread cookies and salt roasted pear tart.
Downtown Newport’s iconic mansion The Vanderbilt, Auberge Resorts Collection will channel its glittery past with its new “Upstairs/Downstairs: A Gilded Age Dinner,” a private, white-glove dinner experience for intimate groups, inspired by the overly extravagant and raucous parties of the Gilded Age. The evening will begin with welcome cocktails in the candlelit Parlour, followed by dinner in the opulent Mezzanine, featuring a custom cocktail menu from Maison Premiere, New York’s long-lauded absinthe and oyster bar, paired with a decadent menu from Executive Chef Richard Gras. A formal dress code, lively music and party games promise a festive event worthy of Alfred Gwynn Vanderbilt himself.
In tandem with Kennebunkport’s Christmas Prelude, the annual seaside celebration in Maine that kicks off the holiday season, White Barn Inn, Auberge Resorts Collection will host the field-to-table limited dinner series, It’s A Dinner, in partnership with chef, restaurateur, and former Food Editor at goop, Ana Hito, who will collaborate with the resort’s Chef Mathew Woolf on the charitable event at White Barn Inn Restaurant.
Solage, Auberge Resorts Collection will welcome California lifestyle brand founder Jenni Kayne to recreate the holidays “at home” in Napa Valley. The designer will transform the coveted pool cabanas into festive dining destinations. Interiors will be outfitted in Kayne’s holiday home collection—from cozy throws and handwoven pillows to sheepskin seat covers—for a warm and welcoming wine country dinner experience. In collaboration with world-renowned Chef Thomas Keller’s Regiis Ova Caviar, the private dining experience will feature a caviar and champagne tasting for guests to enjoy caviar in fun and unexpected ways.
Riviera Maya, Mexico’s beachfront haven Etéreo, Auberge Resorts Collection will offer several specially curated culinary experiences rooted in the ancestral heritage of the region. This November and December, guests can gather around the table and indulge in the resort’s new Abuela Dinner featuring an abuela-inspired meal that celebrates the ancestral heritage and flavors of Mexico. Taking place in Resol Garden, guests will dine on Cochinita Pibil, a treasured Yucatan-style barbecued pork, along with free-range chicken with chocolate poblano mole, homemade churros and abuela’s caramel flan, all served family style. The resort will also introduce Oishi Nights at Etéreo’s Japanese with Mexican influence-inspired restaurant Che Che. Translated to “delicious food” in Japanese, the experience takes guests on a culinary tasting journey featuring various sake wines, locally-sourced fish and seafood, oysters and bluefin tuna. The experience will be accompanied by a live DJ spinning Japanese funk and jazz.
Susurros del Corazón, Auberge Resorts Collection, Punta de Mita’s chic and playful surf retreat set to open on November 3, 2022, will offer festive Mexican-inspired journeys throughout the holidays in December. For its Raicilla Masterclass and Community Dinner, guests will join La Reina, a female-founded brand rooted in community, sustainability and agriculture, on a multi-part immersive and social journey to explore Mexico’s buzziest new spirit, Raicilla, a growing cult-favorite of the local surf community.
On Christmas Eve at The Lodge at Blue Sky, Auberge Resorts Collection, an immersive tasting experience led by Blue Sky’s whiskey ambassador, will take place inside the Yurt. Situated on a high alpine peak in the Wasatch Mountains of Utah, the remote event space is a destination in itself—a private mountaintop sanctuary where guests can arrive by snowshoe, enjoy small bites, sip and explore the distiller’s signature batches and barrel selects and toast to the holidays.
Exclusive Retail and Holiday Markets Celebrate the Arts and Unique Gift-Giving
In the spirit of holiday gift-giving traditions, Commodore Perry Estate, Auberge Resorts Collection, in Austin, will present an exclusive flavor of the iconic From Roy Panettone. In collaboration with the hotel’s executive pastry chef Susana Querejazu, Texas native and world-renowned baker behind the famous domed pastry, Chef Roy Shvartzapel, will create a custom flavor of his repeatedly sold-out sweet bread that will be available exclusively at The Larder Mercantile at Commodore Perry Estate, as well as available online in limited quantities.
Wildflower Farms, Auberge Resorts Collection, the brand-new back-to-nature retreat in New York’s Hudson Valley opening September 30, 2022, will host FIELD + SUPPLY Holiday MRKT, the beloved local makers fair, at its lofty barn event space, Maplehouse, for three weekends in December. Resort guests and the public will be welcomed to shop unique ceramics, textiles, jewelry and home décor at the pop-up holiday market on December 3 and 17, and resort guests will be able to exclusively join for festive workshops—from gingerbread classes to renewed wrapping and wreath making—on December 10.
Chileno Bay Resort & Residences, Auberge Resorts Collection, in Los Cabos, will be transformed into a fashion mecca with Vogue Mexico at the helm of a curated shopping experience exhibiting the top Latin American designers and brands. Two days of fashion events featuring exclusive trunk shows, personal styling sessions, beachside conversations, shopping and more, will be solely available at the property. Several properties will offer the opportunity for collaborating and crafting unique gifts. Hotel Jerome, Auberge Resorts Collection, in Aspen, will engage guests in two VIP gift-giving experiences—one with Miron Crosby, the highly coveted bespoke cowboy boots brand born in Dallas, Texas, and the other with Italian-made BOMBER custom skis. Pen a handwritten message for someone special and the Miron Crosby team will transcribe it onto leather, which will be fixed to an invitation to visit the Miron Crosby studio for a private consultation to choose and customize the perfect boot, with the message sewn into the liner. Wellness Gurus and Journeys Set the Tone for Self-Care Through the Holidays
Hacienda AltaGracia, Auberge Resorts Collection, the world’s preeminent well-being destination tucked into the Talamanca Mountains of Costa Rica, will welcome Bonberi founder Nicole Berrie to host a wellness and culinary residency centered around mindful eating in preparation for the holiday season, November 4-7, which will include food-combining workshops and custom menus for THE WELL. As part of the resort’s Visiting Master Program, acclaimed mind coach Manjit Devgun will host a month-long residency, December 15–January 15, focused on cultivating joy through a unique blend of private and group sessions, such as palm readings, a skin ritual with inner-beauty hypnotherapy and “breathing for joy” workshops. Lights, Music and Art Spread Holiday Cheer
On December 1, Commodore Perry Estate, Auberge Resorts Collection will kick off the holiday season with its annual mansion lighting, which will be elevated this year to a formal holiday event with a musical performance and culinary offerings, launching a month-long celebration at the Estate, ticketed to the public. In addition, a projected artwork show, exclusively commissioned for the hotel by Texas artists Anderson + Kincaid, and artist talks are among the hotel’s festive programming.
At Madeline Hotel & Residences, Auberge Resorts Collection, in Telluride, Alpenglow, an immersive multimedia art installation, will evoke the wonder of the mountains and the ephemeral beauty of the natural environment for a festive, interactive experience during the month of December. In partnership with Brooke Einbender, a.k.a. “Mindbender Art,” a pioneering artist in the “phygital” (physical + digital) fine art space, the show is intended to transport audiences with eye-catching visuals that bring to life the unique character of the property and alpine destination.

Chileno Bay Resort & Residences, Auberge Resorts Collection will host an unforgettable New Year’s Eve in Los Cabos with Orquesta Buena Vista Social Club, the iconic Cuban ensemble led by co-founder Barbarito Torres, performing live at the beach. Direct from Havana, the 12-piece orchestra has reunited for the first time in years for a limited series of curated concerts in select locations around the world.
