  • Chef Juan Pablo Loza is ushering in an enlivening new culinary era at Chileno Bay. Born and raised in the heart of Mexico City, Chef Loza combines his zeal for traditional Mexican fare with over 20 years of global culinary expertise to deliver groundbreaking dining experiences. While at the helm of numerous luxury resort dining programs, Chef Loza cultivated a strong passion for supporting the environment from which his ingredients originated. He is recognized by the Mexican government as an ambassador of sustainable seafood and has taken part in countless initiatives to promote sustainable fishing.

    Now, he brings his refined gastronomic talents to COMAL, leading the way in contemporary Mexican cuisine and overseeing all of Chileno Bay’s imaginative dining venues, with an emphasis on capturing the soulful essence of Latin American traditions. Chef Loza delights in sharing his distinctive gastronomic approach and shares, “I am most excited to experiment with local flavors of Baja’s bountiful landscape and develop exciting culinary programs that Los Cabos has never seen before.”

Our beachside taco bar is all about fun: there are shots of Sotol, Mexican games like Loteria, and our floating bartenders ring a bell when they head out to the pool with cocktails.
