About Maito & Chef Mario

Mario Castrellón has created a culinary experience that has made a difference in Panama, combining the flavors that identify each region of his country, mixing them with the flavors that characterize the Isthmian land where he was born. He is the head chef and owner of Maito, La Despensa de Maito, Besties, Laoban, Atope, Tacos La Neta, Botánica, and Mai Mai. Now he leads a gastronomic movement within Grupo Maito, Chombasia, which blends Afro and Asian flavors, achieving a unique Panamanian flavor influenced by Asian and Caribbean migration to Panama due to the construction of the Canal. <br>His work extends to coffee; he works directly with producers in the country, and Geisha coffee is part of the restaurant's tasting menu. Since the beginning of his career, Mario has supported different non-profit organizations where he has learned to give back to society through gastronomy, being part of programs like Chi Nugue Kwin from Nutre Hogar, which fights child malnutrition in areas “comarcales” and also with the Calicanto foundation, which trained and helped women living in situations of social vulnerability. <br>For eight consecutive years (2016-2023), Mario has placed the eyes of the world on Panama, as he has managed to position Maito as the No. 6 restaurant in the prestigious global gastronomic guide of Latin America's 50 Best Restaurants and as No. 100 in The World’s 50 Best Restaurants.
